Enjoy our twist on the classic gin & tonic starring Rumi Spice’s Wild Foraged Whole Fennel - we like to call it the Fen & Tonic! Impress your guests by crafting anise scented fennel simple syrup and then blending it with your favorite gin and tonic water.

1 Tbsp Rumi Spice Fennel Seeds
1 cup water
1 cup sugar
2 oz gin
4 oz tonic water
1 oz fennel simple syrup
1 glass filled with ice cubes
Lemon peel for garnish
Using a mortar & pestle or spice grinder, coarsely grind fennel seeds.
Combine water and ground fennel in a small pot or saucepan. Bring to a boil, then turn off heat and allow the mixture to cool down.
Strain the liquid into a jar using a fine mesh strainer.
Shake the jar until sugar is dissolved.
Fill a tall glass with ice.
Add fennel simple syrup, gin, and tonic water.
Express the lemon peel by holding it on both ends and twisting it over the cocktail. Rub the peel on the rim for extra flavor. Garnish the drink with lemon.
