1 cup granulated sugar
1 cup water
1 pinch (about 15 threads) Rumi Saffron
Combine all ingredients in a small saucepan and bring to a boil over medium-high heat.
Continue boiling, whisking constantly, until the sugar has dissolved, about 3 minutes.
Remove from heat and let cool to room temperature. (The longer it sits, the more intense of a flavor you get).
Strain into a clean jar with a lid. Cover and store refrigerated for up to 2 weeks.
