Southwest Chili Egg Frittata

 

  • 6 large eggs, use 8 eggs for a 12-inch skillet
  • ¼ cup unsweetened almond milk or dairy milk
  • 2 garlic cloves, minced
  • ¼ tsp sea salt, more for sprinkling
  • Extra-virgin olive oil, for drizzling
  • 1 Tbsp Rumi Southwest Chili Spice Blend
  • ½ cup chopped onion
  • 1 jalapeno, minced
  • ½ cup ham or cooked bacon
  • 2 bell peppers, diced
  • ½ cup pepper jack cheese
  • 1 cup spinach

  1. Whisk the eggs, milk, minced garlic, sea salt, & Rumi Spice Southwest Chili Spice Blend. Stop and set aside after ingredients are well mixed. 
  2. Heat a small amount of olive oil in skillet over medium heat. Add onions and cook until translucent. 
  3. Add diced peppers, minced jalapeno, cooked bacon or ham, and spinach. After the spinach has wilted, add in the egg mixture you set aside earlier.
  4. Sprinkle pepper jack cheese on top and then bake for 15 to 20 minutes.
