Ingredients

1 can chickpeas, drained and rinsed

4 medium tomatoes, diced

1 English cucumber, diced

1 small red onion, diced

1 cup fresh flat leaf parsley leaves, chopped

½ cup kalamata olives, drained and chopped

1/3 cup feta cheese, crumbled

1 small lemon, juiced

¼ cup extra-virgin olive oil

3 tablespoon Rumi Za'atar spice blend

Kosher Salt

Freshly ground black pepper
Directions
In a small bowl, whisk together olive oil, lemon juice and Rumi za’atar spice blend to make the dressing.
In a large, combine chickpeas and all vegetables. Stir in dressing.
Season to taste with salt and pepper
Top with feta cheese and parsley.
