Crispy Cajun Smashed Potatoes

These smashed potatoes are anything but boring- we've added our Cajun spice blend to bring some heat to the mix.

Ingredients
- 2 lb. baby potatoes
- ¼ cup extra-virgin olive oil
- Kosher salt

2 teaspoons Rumi Cajun spice blend
- ¼ cup flat-leaf parsley, chopped
Directions
- Preheat the oven to 450 degrees.
- Place potatoes in a large pot and cover with cold water. Season with about 1 tablespoon salt.
- Boil until fork-tender, about 12-15 minutes.
- Drain the potatoes and let cool slightly.
- Using the flat bottom of a heavy kitchen object (a pot or pan work great!) or a potato masher, smash each potato to about 1/2-inch thick.
- Transfer to a baking sheet and toss with olive oil, Cajun spice, and about 1 teaspoon salt.
- Roast, flipping once halfway through, until golden brown and crispy, about 30-35 minutes.
- Season to taste with salt and top with fresh parsley. Serve warm.
