Directions

1. Preheat the oven to 450 degrees.
2. Place potatoes in a large pot and cover with cold water. Season with about 1 tablespoon salt.
3. Boil until fork-tender, about 12-15 minutes.
4. Drain the potatoes and let cool slightly.
5. Using the flat bottom of a heavy kitchen object (a pot or pan work great!) or a potato masher, smash each potato to about 1/2-inch thick.
6. Transfer to a baking sheet and toss with olive oil, Cajun spice, and about 1 teaspoon salt.
7. Roast, flipping once halfway through, until golden brown and crispy, about 30-35 minutes.
8. Season to taste with salt and top with fresh parsley. Serve warm.
