2 lb. ground beef or lamb (or a mixture of the two)
1 small yellow onion
1 bunch cilantro leaves and tender stems
1 packet Rumi Spice Koobideh Spice Mix
Peel and quarter the onion and roughly chop the cilantro. Pulse in a food processor until finely chopped. Transfer to a large mixing bowl.
For ultra-tender kebabs, add the meat to the food processor and pulse a few times until tacky.
Mix the meat with the onion and cilantro mix, oil and Koobideh Spice Mix packet
Shape the meat into koobideh-style logs (about 6” long and 1” thick - they can be either wrapped around skewers or not).
Grill or broil for 3-4 minutes per side, until well charred & cooked through.
