Za’atar Roasted Vegetables
4 large carrots, peeled, cut in half and quartered
1 large sweet potato, peeled, cubed
1 medium russet potato, peeled, cubed
1 medium parsnips, unpeeled, cubed
1 medium red onion, thinly sliced lengthwise
3 teaspoons Rumi Za'atar spice blend
1 clove garlic, minced
1 1/2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
½ cup fresh mint leaves, chopped
¼ cup feta cheese, crumbled
Freshly-ground black pepper
Preheat oven to 400F.
In a large bowl, combine all vegetables, olive oil, garlic, lemon juice, za’atar, salt and pepper. Toss until evenly coated
Spread vegetables in a single layer on a large, rimmed baking sheet.
Roast for approximately 40 minutes, stirring occasionally, or until the vegetables are golden brown on the edges.
Remove from oven. Top with feta cheese and fresh mint leaves before serving.
