Cajun spiced shrimp makes a spicy and savory main dish, or a delicious topping for pastas, couscous, and even saffron rice.
Ingredients
1 pound large shrimp, peeled and deveined
Kosher salt
2 tablespoons olive oil
2 tablespoons salted butter
2 tablespoons Rumi Cajun spice blend
½-inch knob fresh garlic, minced
¼ cup chopped fresh parsley, for topping (optional)
Directions
Add the shrimp to a large mixing bowl. Pat dry and season with a pinch each of salt and pepper.
Toss with olive oil and Rumi Cajun spice blend until well coated.
Melt the butter in a large skillet over medium/medium-high heat.
Once melted, add in the garlic and saute until fragrant, about 1 minute.
Add in the shrimp and cook, tossing occasionally, until cooked through and no longer opaque, about 5-7 minutes total. In a large bowl add the shrimp and season with salt and pepper.
Transfer to a serving platter and garnish with fresh parsley. Serve over rice, alongside toasted pita bread, or with your favorite seasonal vegetables.
