Fennel Salt Crusted Steak with Fennel Herbed Butter

Ingredients
- 1 stick unsalted butter, softened to room temperature

2 tsp Rumi Spice Fennel Seasoned Salt
- ¼ cup thinly sliced chives or scallions
- 1 tsp fresh lemon zest

For Steak
- 4x 1 - 1 ½ inch thick New York strip steaks
- Extra virgin olive oilÂ

2 Tbsp Rumi Spice Fennel Seasoned Salt
For Fennel Herbed Butter
Directions
First, make your fennel herbed butter. Add the softened butter to a small mixing bowl. Fold in 2 teaspoons of your Fennel Seasoned Salt, sliced chives or scallions, and lemon zest until well combined. Refrigerate until firm.
- Meanwhile, make your steak. Bring the steak to room temperature. Preheat a grill to high heat.
Drizzle the steak on both sides with olive oil and rub liberally with your Fennel Seasoned Salt until well coated on all sides.
Place steaks on the grill until slightly charred on the bottom side, about 4-5 minutes. Flip over and continue grilling for about 4-5 minutes more for medium-rare. For medium doneness, grill for additional 2 minutes.
Transfer to a cutting board and, while still warm, top each steak with a dollop of Fennel Herbed Butter. Let rest for at least 5 minutes before slicing and serving.
