Healthy Zucchini Bread with Mulling Spice - Rumi Spice

My favorite Rumi spice changes pretty much every week, but for the past month, I have been completely obsessed with Rumi Mulling Spice. Here’s my trick - I grind it. Then I throw it into anything and everything I am baking.

Rumi mulling spice is like a super elevated pumpkin pie spice. It has the same ingredients as pumpkin pie spice but with added rumi coriander rumi saffron, orange peel, cardamom, black pepper. Standard pumpkin pie spice is just: cinnamon, ginger, nutmeg, allspice, and cloves. Also this Rumi mulling spice blend has Mace instead of nutmeg, they are from the same plant, but mace is regarded to have a more refined aroma than nutmeg.

My favorite things to bake are really healthy things that have vegetables in them and lots of spice. My husband always (lovingly) makes fun of me for trying to sneak vegetables into everything that is supposed to resemble a dessert.

Today I'm sharing with you my new favorite zucchini bread recipe. It takes the humble zucchini bread from delicious to downright addictive. The moist, earthy zucchini paired with the bright citrus notes and the complex spice blend create a symphony of flavors in every bite.
