Stuffed Dates with Harissa Maple Drizzle

Stuffed Dates with Harissa Maple Drizzle

Ingredients

  • 1 lb. large dates (about 20-25 dates)

  • 6 oz. block feta or goat cheese

  • 1/3 cup pure maple syrup

  • 1 Tbsp Rumi Harissa Spice Blend

  • Coarse kosher salt

  • 1/2 cup shelled pistachios, finely chopped

Directions

  1. Preheat the oven to 350 degrees F.

  2. Carefully slice down the long side of each date and remove the pits.

  3. Stuff the insides (where the pit used to be) with your preferred cheese. Place on a parchment-lined baking sheet, cut-side down.

  4. In a small mixing bowl, whisk together the maple syrup, Harissa, and a pinch of salt.

  5. Brush (or drizzle) the tops of each date with your Harissa-spiced maple syrup.

  6. Top each date with a sprinkle of flaky salt and crushed pistachios (omit the salt if your pistachios are salted).

  7. Bake until the cheese is warmed through and the nuts are lightly toasted, about 5-8 minutes. Let cool before serving.
