Ingredients
3 fresh lobsters (Large, cleaned, and cut)
- 4 tbsp oil
- 2 medium-sized onions (finely chopped or sliced)
- 2 medium-sized tomatoes (finely chopped)
- 1 tbsp garlic paste
-
1 tsp Rumi Garam Masala
- 1 tsp red chili powder
-
1.5 tsp cumin powder
-
1.5 tsp coriander powder
- 0.5 tsp turmeric powder
- A third of a dry coconut
- 5-6 black peppercorns
- 2 green chilies (slit in half)
- A few coriander leaves
- Water (as required)
- Salt (according to taste)
Directions
- Start by making a fine paste of the coriander leaves, green chilies, coconut, and whole pepper. Add a little water to make it smooth. Reserve this paste.
- In a heavy bottom pot, add some oil and place it on the stove on medium heat. Add in the onions and let them turn golden brown. Then it is time to add the garlic paste. Mix and cook until the rawness of the garlic fades away.
- At this point, add the ground paste, chopped tomatoes, and all other ingredients except the lobsters. To avoid the mixture sticking to the bottom of the pot, you may need to add some water. You may lower the heat and cover the pot to ensure the ingredients in the mixture come together well. Uncover after simmering for a few minutes, and lightly mash the tomatoes with a spoon.
- Add sufficient water for a thick curry, while keeping in mind that lobsters also release flavorful juices while cooking. Let the curry come to a boil on high heat, then lower the flame to medium and add in the lobsters. Cover and cook for approximately 15 minutes. With lobsters, you should always avoid overcooking. Adjust the spices to levels that are tolerable for you and your family.
- Use some chopped fresh coriander leaves as garnish. Serve this spicy curry with some fragrant Challaw (Afghan Cumin and Cardamom Rice)
