Typical bellinis are made with Prosecco and peach puree or juice. This recipe for saffron strawberry bellinis pairs the floral taste of saffron with the sweetness of strawberries.
1 pint fresh strawberries, chopped
2 tablespoons Saffron Simple Syrup
1 bottle of champagne or prosecco, chilled
Add the strawberries and saffron simple syrup to a blender. Blend until smooth.
Strain the strawberry mixture in a fine-mesh strainer, getting rid of any large seeds.
Add to a mixture and mix with champagne until well combined. Serve chilled in champagne flutes, or over ice.
