Servings
3 1/2 cups

Ingredients
- 2 Tbsp dark brown sugar
- ¼ cup extra-virgin olive oil
- ⅓ cup pure maple syrup
- 1 tsp vanilla extract
-
1 ½ tsp Rumi Spice Baharat spice blend
- ½ tsp kosher salt
- 2 cups old-fashioned rolled oats
- ½ cup sliced almonds
- ½ cup pepitas (pumpkin seeds)
- ½ cup golden raisins
Directions
Preheat the oven to 325 degrees.
In a large bowl, mix together brown sugar, maple syrup, olive oil, vanilla extract, Baharat spice, and salt until combined. Add in the oats, almonds, pepitas, and dried raisins and mix until well coated.
- Pour the mixture onto a parchment-lined baking sheet, pressing firmly into a single layer.
Bake for 15 minutes. Remove the tray from the oven and toss the granola.
Return to the oven and continue roasting for 10-15 minutes more, until lightly browned and toasted. Let cool completely at room temperature.
Using a large spatula or your hands, lift the granola off of the baking sheet and break into large chunks. Store at room temperature in a resalable storage container.
