Coriander Pork Tenderloin
Cook a juicy pork tenderloin - roasted in the oven with Rumi Spice’s citrusy Herati coriander and Italian herb pork tenderloin rub.
1 lb pork tenderloin
1 tsp salt
1 tsp cracked pepper
3 cloves garlic, minced
1 tsp olive oil
1 Tbsp Rumi Spice Coriander seeds, crushed
1 tsp Italian seasoning
2 Tbsp butter
Preheat the oven to 350F. Line a baking sheet with foil.
Using a mortar & pestle or spice grinder, crack the whole coriander into coarse pieces.
In a small bowl combine minced garlic and olive oil. In another small bowl combine all the seasonings.
Season the tenderloin with salt and pepper. In an oiled pan on medium-high heat, brown all sides of the pork (do not cook through yet), approximately 1 to 2 minutes per side.
Place tenderloin on top of the foil-lined baking sheet and brush the entire surface with the oil and garlic mixture.
Sprinkle the entire surface of the tenderloin with combined seasonings.
Cut butter into four slices and place on top of tenderloin.
Wrap the pork in the foil and place back on the baking sheet.
Bake for 15-20 or until internal temperature is 150 degrees.
Remove from the oven and let stand for 10 minutes.
Cut into slices and serve.
