Spicy Vegan Peanut Stew

Ingredients

  • 2 tablespoons coconut oil
  • 2 onions, chopped
  • 6 garlic cloves, diced
  • 2 tablespoons ginger, grated or minced
  • 2 teaspoons Rumi Paella Blend
  • 2 teaspoons whole coriander seeds, lightly crushed

  • 2 teaspoons ground cumin
  • 1 tablespoon Harissa

  • 4 cups sweet potatoes, cubed
  • 1 teaspoon black pepper
  • 12 oz SIMPLi’s Regenerative Organic Certified® Chickpeas (one bag)

  • 18 oz Matriark Arrabbiata pasta sauce
  • 8 cups vegetable broth

  • 1–2 cups creamy natural peanut butter (no sugar added)
  • 2–3 teaspoons sea salt
  • 2 tablespoons apple cider vinegar
  • 1 lb kale (chopped and stems removed)

  • Garnish: Cilantro, crushed peanuts, red pepper flakes

Directions

  1. Prepare Chickpeas: Begin by rinsing 12 oz of SIMPLi’s Regenerative Organic Certified® Chickpeas under cold water. Place them in a pot and cover with water, about 2 inches above the chickpeas. Bring to a boil, then cover and set aside for one hour. Drain, then place them back in the pot, cover with water, bring to a boil, then simmer for about 90 minutes. Drain.

  2. Sauté Aromatics: Heat 2 tablespoons of coconut oil over medium heat. Add the chopped onions, diced garlic, and grated ginger. Sauté until the onions are translucent.

  3. Add Spices: Incorporate 1 tablespoon of Rumi Spice Harissa, 1 teaspoon of black pepper, 2 teaspoons of lightly crushed whole coriander seeds, and 2 teaspoons of ground cumin. Stir for 3 minutes over medium heat.

  4. Combine with Sweet Potatoes and Chickpeas: Add the cubed sweet potatoes and the cooked SIMPLi’s Regenerative Organic Certified® Chickpeas to the pot. Stir to ensure an even coating of the spices.

  5. Add Sauce and Broth: Pour in the Matriark Arrabbiata pasta sauce followed by the vegetable broth. Mix well to combine all the ingredients.

  6. Simmer the Stew: Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the sweet potatoes are tender.
  7. Enrich and Season: Stir in 1 to 2 cups of creamy natural peanut butter and season with 2 to 3 teaspoons of sea salt. Adjust the seasonings to your taste.
  8. Add Greens: Towards the end of cooking, add the kale. Cook until the greens are wilted. Finish with a splash of apple cider vinegar.

  9. Serve: This is great alone or served on top of rice, quinoa, or another grain of choice. Ladle the stew into bowls and garnish with cilantro and crushed peanuts, if you desire.
