Rumi Saffron Cinnamon Overnight Oats with Coconut Milk

We experiment with saffron all the time, but this is one of our favorites. Overnight oats are all the trend these days and a great way incorporate a healthy diet in your busy lifestyle, and the best part is this recipe does not need any sugar – it is sweet enough as is! Ingredients

Preparation

(for two servings)
  • 1 ½ cup unsweetened coconut milk, warmed (or one 13.66 oz can)
  • Pinch Rumi Saffron threads
  • 1 Tsp. ground cinnamon
  • 1 ½ cups oats (old fashioned or instant, either work!)
  • ½ pear, quartered and sliced
  • Chopped roasted, salted pistachios for topping

Prep time: Less than 10 minutes

Let pinch of Rumi saffron steep in warmed coconut milk. Stir in cinnamon, then oats. Pour into jars or containers of choice and top with sliced pear. Refrigerate overnight, or for about 6 hours if you can’t wait for this tasty breakfast snack. Sprinkle with chopped pistachios and enjoy.
