Chia Seed Pudding with Saffron Recipe

Whip up this creative breakfast recipe for Chia Seed Pudding made with saffron and honey for a simple, healthy, but filling meal to start your day.
  • 1/4 tsp Rumi Saffron threads
  • 1 1/2 cups milk (we prefer unsweetened almond milk)
  • 1/2 cup chia seeds
  • 1-2 Tbsp honey (adjust more or less to taste)
  • 1 tsp vanilla extract
  • Fruit for topping

 

    1. Steep the saffron in two tablespoons of warm water for approximately 15 minutes.
    2. In a bowl combine steeped saffron, milk, chia seeds, honey, and vanilla. Whisk to combine.
    3. Pour into individual containers and refrigerate overnight (or at least 7 hours). The chia pudding should be thick and creamy. If not, add additional chia seeds, stir, and refrigerate for another hour or so.
    4. Enjoy as is, or top with fresh fruit.
